Thank you so much for the Thanksgiving menu planner. We tried many of the recipes and they were delicious. They really helped us navigate the holiday and stick to our GAPS diet. We can't wait for a GAPS friendly weekly planner.

Bless you. I recently started back on my allergy diet. I can't have grains, most nuts, lots of vegetables, all the meats except lamb (I don't like lamb), and few fish and fruits. I also dislike cooking and I love sweets. Thank you for experimenting with the recipes. I will definitely being purchasing the menu. I tried to make pumpkin filling and it just didn't turn out well with no brown sugar. I thought maybe maple flavoring would help.

I use Stevita brand stevia and haven't had any problems with it at all. I consume quite a bit in the ice cream I make and it doesn't bother me. Maybe just the Truvia is a problem. Stevita doesn't have a bitter taste to it.

Hi Jenny,
I agree with you and this was confirmed by the yahoo GAPS group I am on. That's okay - I"m having a lot of fun with grain-free baking, etc.
I also made some bread stuffing out of coconut bread and it turned out great!

I don't think wild rice would be GAPS legal even if it isn't a grain, because of the starch (polysaccharide) content. I think it would be in the same category as the pseudo-grains, quinoa and buckwheat.

HI Sharon,
I have not experimented that much with Stevia. But I would think it would be a fine replacement in the cranberry sauce. I think you will just have to play with how much to add to get to the desire sweetness you're looking for.
As for Truvia, what is your experience with it? I just found a post that listed several people having adverse side affects from it which concerns me. Have you ever had any problems with it?

Thanks so much,

Among other things, I am sugar-free, excluding things like honey and maple syrup. I only use Stevia ("Truvia"--a brand of Stevia without an aftertaste) and am wondering about using it to make cranberry sauce. I think the boiled type uses sugar to kind of make a syrup for the dish. Do you think it would work with Stevia? I suppose I could make the raw-type with Stevia and an orange. But, I will definitely order your Thanksgiving Planner. What a good idea! Thanks.

Hi,

We have always made a tofu pot pie with gravy for Thanksgiving. If you can't have gluten then Shepard's Pie with potatoes is always a great option. I know not everyone can have soy but there are many substitutions for the tofu. Mushrooms are also good if you aren't including meat.

Thank you for your menu planners.
